Enough for 6 pancakes
1 cup flour (sifted)
1 tsp baking powder
1 tsp vanilla powder
1 cup milk
2 tbs vegetable oil
For the syrup:
First thing, it is optional to squeeze half a lemon on the 1 cup milk and leave it for 15 minutes for a more airy/ fluffy pancake. But if you choose to go with the regular method, here it is:
1- pre-heat the oven on low heat
2- In a bowl, with a fork mix the egg with the milk and vegetable oil. Add the sifted flour, baking powder and vanilla powder and mix.
3- Get a non-stick frying pan spray it with vegetable oil or melt very little butter over very low heat and then swipe off the butter with kitchen paper leaving the frying pan only greasy without any melted butter or oil in it.
4- With a ladle, scoop some of the batter until it's full and then pour in the middle of the pan slowly. the batter will start spreading in the pan forming your first pancake and it will start cooking. As soon as you see bubbles start to pop on the surface of your pancake wait a few seconds till more bubbles pop and surface starts to dry up a little then flip the pancake. wait almost 30 seconds or until it's cooked from the other side and then take it out and put it in a tray and in the oven to keep warm. Repeat this step till you cook all the batter.
5- for the syrup mix some honey with lemon juice and dilute with a little water. Add vanilla powder
Serve warm with your favorite fruits :)
