Who would have thought Lentils Soup could have shrimps in it! Trust us, it's a magnificent combo! Here's how to make it:
1 Cup red lentils
2 Garlic cloves finely chopped
1 tsp Chili
1tbs Ginger Powder
1tbs Turmeric Powder
1tbs Coriander Powder
3 tbs Olive Oil
500 gr Shrimps Cilantro
Wash Lentils with water.
In a hot pan add 1tbs olive oil, juice of one lemon, and 1 finely chopped garlic clove. Add shrimps and stir. As soon as shrimps change color, add 1/2 cup of water and leave to simmer for a 1-2 minutes until shrimps are cooked. then turn off the heat.
In a large pot, heat 2 tbs olive oil, and sauté the rest of the finely chopped garlic with the spices and salt. Add the lentils and stir. add the broth from the shrimps. Add 2 cups boiling water. Cover and leave until cooked. add more spices to your taste if needed. As soon as the lentils are softened. turn off the heat.
Serve the soup in soup bowls ant top with shrimps. Garnish with Cilantro leaves.
