Caramelised onion, olive and goats cheese tartlets

We love tarts for lunch! Wether it has a base of puff pastry, filo pastry, or a simple dough, tarts are just a hearty full meal that just need some green salad on the side and you're all set!

Ingredients:

Ready made (frozen) puff pastry squares (brought to room temperature)

1 Beaten egg

Olive oil

2 Large Red Onions

1tbs Red Grape Vinegar

1tbs Brown Sugar

Goats Cheese

Black Kalamata Olives

Anchovies (optional)

Caramelised onion, olive and goats cheese tart 

Method:

Preheat oven to 210°C.

Heat the oil in a large frying pan over a medium-high heat. Then add the onions and cook for 10 minutes or until they soften. 

Add the brown sugar, vinegar and continue cooking for another five minutes. Remove from the heat and allow to cool slightly.

Prepare a baking tray and line it with baking paper. Start preparing the tart base. If your puff pastry is already made into squares, get out 3 or 4 squares for each tartlet. To build the base start with 1 square and roll it out slightly with a rolling pin until it's slightly larger than the other squares. brush from both sides with egg and put on top the baking paper in the tray. Get another square, this time without rolling it out. Just brush it with egg and put it on top of the previous square. repeat with another square; without rolling it out. Just brush it with egg and put it on top of the previous square.

Now, time to put the toppings! in the middle (leave around 1.5 cm from each side)  place some caramelised onions, 2 or 3 olives, and a slice of goat cheese. You can always add anchovies replace the olives with Anchovies. That's optional. 

Finally, fold the edges of the very bottom puff pastry square upwards (the one that you rolled out and made larger at the beginning). 

When you're done with building all your tartlets, put the tray in the oven and bake for 15-20 minutes until the puff pastry puffs and turn golden and the cheese is slightly grilled. 

Serve with a simple salad of green leaves and lemon dressing
