We've been obsessed with puff pastry lateley! Here's another great recipe for a hearty breakfast! 

Ingredients:

Ready made (frozen) puff pastry squares (brought to room temperature)

4 eggs

1 Beaten egg

Salt, Pepper and Dried Thyme

 

Method:

Preheat oven to 210°C.

 

Prepare a baking tray and line it with baking paper. Start preparing the tart base. If your puff pastry is already made into squares, get out 3 squares for each tartlet. To build the base start with 1 square and roll it out slightly with a rolling pin until it's slightly larger than the other squares and put on top the baking paper in the tray. Put 2 more puff pastry squares, this time without rolling them out, and put on top of your base square.  Brush the tartlet with beaten egg. Repeat process for the rest of the tartlets then put the tray in the oven and bake for 15-20 minutes or until pastry is puffed and golden as shown in the picture.

Take the tray out of the oven. Make a hole in the center of each tartlet and break an egg inside. Put back in the oven and bake until eggs are cooked. 

Sprinkle with salt, pepper and dried thyme, and enjoy!
